Small though it may be (catering for just 24 people per seating), The Pine is a powerhouse of food storytelling, led by Jeremy and Cassie Austin – a husband-and-wife team passionate about plating up personal memories of their years spent discovering China's culinary traditions. The extensive tasting menu changes often and is shrouded in mystery – try viewing it on the restaurant's website, and you'll be met with a cryptic response – but each dish is guaranteed to be intricate, theatrical and accompanied by an engrossing anecdote or two. Spanning a belt-unbuckling 18-21 courses, it's an experience that stretches over several hours, making it feel less like dinner out and more like a transportative, multi-sensory performance.
