Think the rustic warmth of a forest cabin with food that wouldn't look out of place in the most fashionable districts in Paris. Colombe Saint-Pierre sees herself as a custodian of her native Saint Lawrence Lowlands region of Quebec, supporting small producers who focus on sustainability. The five-course menus are hyper seasonal, changing every month, but always looking to the region's culinary traditions and flavours, with many of the ingredients foraged. Dishes, served by a passionate team, are designed to be shared (all the guests sit down and eat at the same time). It might be grilled octopus lacquered with honey and served with crab bisque, followed by lamb loin with steamed seaweed, while wild tea sorbet and jasmine mascarpone are delicate bedfellows for strawberry meringue pie. The wine list focuses on minimal intervention pours from Canadian artisans.
