The son of Québécois singing legend Michel Rivard, chef Antonin Mousseau-Rivard opened Le Mousso to a chorus of critical acclaim in 2015. The dining room – featuring Scandi-inspired grey felt-covered seating and glazed crockery – reduced in capacity from 55 to an intimate 30 following a move to a new venue down the street. With just one sitting a night, Mousseau-Rivard’s seasonal 12-course tasting menu continues to evolve apace. Guests are asked to arrive before 6.30pm for a symphony of meticulous creations: foie gras with chamomile and candy cap mushrooms, celery root mousse with smoked trout sprinkled with cinder dust, arrive with sublime wine pairings and tableside guidance. Menus are not released online but severe allergies can be worked around and it’s possible to request meat- or fish-free experiences, if plenty of timing is given.
