Mother is a stylish little bar, with a simple mission: to showcase the very best, hyper-seasonal produce, and to play with flavour through the medium of fermentation. Its innovative cocktail menu is split into three sections: 'Yesterday' with drinks focused on the principles of classicism or minimalism (think Salted Negroni: combining the drink's three core ingredients with lacto-fermented plums and neroli); 'Today', all quirky house creations like the Dulce de Leche, which mixes cocoa and pecan dark rum, caramelised yoghurt, arabica and espresso alginate; and the weekly-changing 'Tomorrow' section, which is a lucky dip of brand new, house-made drinks laced with cordials and kombuchas.
