This spacious, moody bar is defined by dark wood, botanical prints and a cocktail menu that traces the naturalist’s discoveries through flavour. The citrus-forward Cyanometer arrives azure-blue with a cloud-like layer of foam, named after the instrument von Humboldt used to measure the deepest shade of blue sky ever recorded during his historic Andean expedition. Cotopaxi, a rum-based cocktail served hot, is finished with a dash of cinnamon and set alight barside.
