Sleek, modern Wild Blue is a fine-dining establishment with serious personality. Styled like a 21st-century steakhouse, it's moodily lit, with a scintillating selection of wines on display (comprising British Columbia discoveries and international bottles) and an open kitchen offering behind-the-scenes views of the chefs in full flow, turning out refined, seafood-led dishes with precision and theatre. But it's not just the setting that stimulates the senses: the a la carte menu is so extensively packed out with sumptuous dishes that it can be difficult to decide where to begin. On the sea-sourced side, there's oysters, caviar, seafood towers and hearty cod and sablefish mains, while the grill offers a selection of steaks, veal chops, pork chops and beef tongue.
