In the Cayman Islands’ picturesque Kimpton Seafire Resort and Spa, you’ll find Library by the Sea: an indoor-outdoor hybrid bar set to the backdrop of the stunning Caribbean shores. While being a resort bar can often come with its stereotypes, this one has carved out a reputation as Grand Cayman’s destination bar, while also taking full advantage of the benefits and infrastructure that hotel backing can bring – sustainable practices, vintage spirits and ingredients otherwise unavailable on the island, to name but a few. Cocktails are devised by Jim Wrigley follow the bar’s literary moniker and are categorised by book genre, from ‘Crime Fiction’ to ‘Rare & First Editions’. Take the Tale of the Bitter Bunny (based on Beatrix Potter's The Tale of Benjamin Bunny), made with gin, Campari, fermented carrot cordial, grapefruit husk vodka and dry vermouth or the E. Hemingway Special, made with 1930s rum, 1930s maraska maraschino, lime and grapefruit.
