Bartending veteran Simon Crompton (Ritz-Carlton Grand Cayman, Aqua Lounge and Restaurant) opened Door No.4 at Seven Mile Beach (one of the Caribbean’s most pristine beaches) in 2022 with a vision to help get the island’s hospitality industry back on its feet after a rough pandemic. London expat Alan Cartolano (Hawskmoor) has since led the bar programme, applying his signature high-end cocktail techniques to a palate of tropical flavours with finesse. The results are impressive – with clarification, acidification, carbonation and other behind-the-scenes tricks at play, the bar’s highballs, refined classics, guilty pleasures, and no- and low-proof cocktails bear all the elegance of the world’s top drinks programmes while maintaining the playful soul of the playa. In contrast to the colourful drink ingredients, the warm brick, velvet and globe lights in the bar offer a refined environment for sipping.
