Calming water fountains contrast with the ferocious flames of Francis Mallmann's open fire pits at the destination restaurant, Fuegos de Apalta, where a meal is one of many gastronomic add‑ons to vineyard tours (others include picnics, stone‑baked pizzas and sommelier‑guided tastings).
