If you ever want evidence that it's a small world, you can simply cite Refer, where a Canadian chef cooking Nordic-inspired dishes in the Chinese capital. This chic little restaurant is tucked away in the buzzing Taikoo Li Sanlitun village of shops, restaurant and The Opposite House boutique hotel, where chef Talib Hudda prepares elaborate 18-20-course feasts. Hudda's dishes are some of the most beautiful around, with delicate presentation that elevates each plate emerging from the open kitchen to a work of art. The menu changes seasonally, but dishes could include foie gras tart with fermented apricot, elderflower pickled onion, candied almonds and fresh apricots or king crab grilled with kombu, charred apple dashi, pickled spruce and thyme, and can either be paired with wines or a flight of house-made juices.
