You’ve most likely seen their adorable hedgehog BBQ roast pork buns on social media – and this is only one of 40 kinds of dim sum on offer. The Eight, by chef Joseph Tse, was the first Chinese restaurant in Macao to have gained three Michelin stars (in 2014) and has retained them ever since. Named after the number symbolising good fortune, the restaurant translates this into its interiors by way of figure-of-eight decor and walls of silk goldfish. Other specialties include suckling pig with glutinous rice, and honey-glazed barbecue pork. There is also more than 17,000 different wine labels available.
