Seasonal, unusual and forgotten Colombian ingredients make the cut at this hip venue  in bohemian Chapinero Alto. On the ground floor, a dimly lit dining room offers an à la carte menu with shareable plates. On the first floor, diners enjoying the tasting menu can look directly into the open kitchen – an intimate space whose walls are lined with colourful ingredients, known as its "spice library." At the helm is Alvaro Clavijo, who has returned to his homeland after stints in some of the best kitchens in Europe and North America, takes classic, local dishes and throws in twists: think escargot with Golden berry, pork crackling and seaweed accompanied by a pairing of a tree tomato mead. The non-alcoholic pairings lean into bold botanical flavors, using local ingredients (like huacatay, paico and lulo) to show just how expressive a juice can be.
