Catalina ‘Cata’ Vélez, originally from Pereira, trained at Le Cordon Bleu in Paris before returning to Colombia to open her own place in Cali. It is a little off-the-beaten tourist track, but that’s what makes it even more exciting, especially when you walk through the restaurant’s fragrant garden. Vélez’s menu draws from the centuries-old cuisine of southwestern Colombia but is executed with contemporary flair. The menu lists the origins each dish, and if you want to know where a specific ingredient hails from, just ask – the team will know. Flavours are big and bold: you might start with shrimp in a spicy citrus yacon-based marinade, followed by horse mackerel served with coconut kefir yoghurt; slow-cooked pork roasted over a wood fire with llapingachos, mashed potato patties topped with chicharrón; or chicken and coriander rice steamed in a banana leaf. Round it out with the turrón of dark chocolate and tropical rainforest fruit.
