Set within an historic Czech building, La Degustation Bohême Bourgeoise honours its heritage with its fine dining riffs on the country's culinary history. The elegant room also plays with the contrast of traditional and modern, with its glittering golden ceilings, glass-fronted cave á vin and contemporary crystal chandelier – made up of glittering bones – retain a sense of grandeur while swerving any hint of chintz. The restaurant holds one Michelin star for its inventive set menus, which change with the seasons and heavily feature game and foraged ingredients. Past dishes have included juniper-marinated fallow deer with garlic and thyme, served in a beef, beetroot and juniper jus, two-day caramelised onions, sweet and sour pickled onion sprouts, pear purée and beetroot agar, finished with bacon and thyme oil.
