It may lie off the coast of Sweden in the Baltic Sea, but Bornholm isn’t actually too far from Copenhagen. Nicknamed the ‘sunshine island’, it’s an idyllic destination, with pretty-as-a-picture fishing villages and a flourishing creative community. Crisscrossed with gentle country lanes and cycling paths, at some point you’ll almost certainly end up at the southernmost tip of the isle, where, on the sandy beach of Øster Sømarken, you’ll find Kadeau Bornholm. Founded in 2007 by three childhood friends – Nicolai Nørregaard, Rasmus Kofoed and Magnus Klein Kofoed – who all grew up on Bornholm, the restaurant celebrates the island and its bounty. The views are breathtaking, but tear yourself away to focus on the multi-course menu, which is shaped by the seasons and the terroir, and is only available from May to September. Fresh herbs, fruits such as figs and mulberries, vegetables and honey come from the kitchen garden, less than 1km away, or are foraged, before being transformed by chef Kyumin Hahn into a series of flawless dishes served on locally made ceramics. The restaurant even has its own beach camp, so you can make a night of it.
