Set along Puerto Plata's north coast, Aguají pairs sweeping sea views with a menu that celebrates the Dominican Republic's Indigenous Taíno-Arawak heritage. Chef-patron Tita is a known activist and television judge, but this restaurant is her most personal legacy and an homage to her roots in the region. Dishes reflect her hyper-local ethos, showcasing native Dominican ingredients such as cacao, avocado, and the little-known guáyiga root, to build ancestral flavours into modern creations. These include the finely-minced Puerto Plata-style ceviche with coconut bisque and Caribbean citrus, Taíno corn with shards of Creole tortilla, and a cocoa mousse served in a cocoa pod with seasonal berries. The rum-based cocktails are equally thoughtful, incorporating flavours like tamarind, served in carefully considered, artisan-made Taíno pottery.
