Founded by Ecuadorean chef Rodrigo Pacheco, Bocavaldivia is an ambitious project aimed at restoring ecosystems and reconnecting cultures through sustainable tourism, agroforestry and even the building of schools for local children. As one part of this large‑scale project, the restaurant promotes ancestral ingredients and techniques while educating diners about their origins and values. The team is made up of local fishermen, farmers, foragers, artisans, ethnobotanists and cooks. Almost all of the produce comes from the surrounding area, with dishes including country chicken caramelised in volcanic stone, or a fresh salad of forest plants including the leaves of cassava and purple sweet potato. Pacheco serves bespoke seven‑course tasting menus, one of which can be paired with a half‑day immersion experience that includes an artisanal shore‑fishing ritual and a fishing trail. There is also an option to enjoy a three‑course dessert tasting which includes a cacao ritual and wine pairing. The restaurant is located within the paradisiacal Tanusas retreat and spa on the Pacific coast of Manabí.
