Founded by Ecuadorean chef Rodrigo Pacheco, Bocavaldivia is an ambitious project aimed at restoring ecosystems and reconnecting cultures through sustainable tourism, agroforestry and its eponymous restaurant. Look closely, as the hut-style dining area is hidden away within the paradisiacal Tanusas retreat on a beachfront facing the Pacific coast of Manabí. There, each dining experience becomes an opportunity for the team to educate guests about ancestral ingredients and traditional techniques. Almost all of the produce comes from the surrounding area, with dishes including country chicken caramelised in volcanic stone, fresh salads made from the leaves of cassava or purple sweet potato. Experiences for diners are not limited to the restaurant’s signature seven-course tasting menu – guests can also take part in shore fishing rituals, foraging trail hikes and a cacao ritual paired with a three-course dessert tasting.
