Founded by Ecuadorean chef Rodrigo Pacheco, Bocavaldivia is an ambitious project aimed at restoring ecosystems and reconnecting cultures through sustainable tourism, agroforestry and even building schools for local children. As one part of this large-scale project, Bocavaldivia restaurant promotes ancestral ingredients and techniques while educating diners about their origins and values. Almost all of the produce comes from the surrounding area, with dishes including country chicken caramelised in volcanic stone, or fresh salad of forest plants including the leaves of cassava or purple sweet potato. Pacheco serves bespoke tasting menus from four to seven courses, ranging from $65 to $250, depending on the menu and whether it is eaten in the dining room or outside in the tropical forest, mangroves or reefs. The restaurant is located within the paradisiacal Tanusas retreat and spa on the Pacific coast of Manabí.
