What looks like a ruined castle overlooking the Gulf of Aqaba was in fact constructed from scratch in the 1990s, though the location is full of history: the road traditionally connects St Catherine’s Monastery with JerUSlem. The castle was built according to ancient construction techniques, the furniture is made from reclaimed wood and lighting fixtures handcrafted from recycled glass bottles. Terraces have stunning views along the Sinai coast and take in four countries (Egypt, Israel, Jordan and Saudi Arabia) while the menu specialises in meat, fish and seafood dishes slow-roasted in Egyptian earthenware and accompanied by vegetables, dates and figs; eating by hand is encouraged to fit the food-fit-for-a-pharaoh vibe — as too the underground vault where four times a year a sunbeam lights a candle through a hole in the floor. Bring your swimming costume: there’s a pool built into the cliffside.
