Le Clos des Sens

A meat-free, hyperlocal, high-end restaurant and hotel, in the genteel town of Annecy at the foot of the French Alps. At Le Clos des Sens you can choose one of three tasting menus, in five, seven or ten courses, and all the fish will come from local lakes: perch, omble chevalier and crayfish. Chef Laurent Petit has created what he calls ‘lake and plant cuisine’. Typical fare includes confit trout with local bottarga; barbecued beetroot with smoked fera (another fish indigenous to the area), and desserts of roast parsnip with chestnut honey and homegrown chicory tart.
