Le Clos des Sens

The high-end restaurant and hotel Le Clos des Sens is in the genteel town of Annecy, in the foothills of the French Alps. The decor allows the bucolic view to sing, with a huge window looking out to the mist-shrouded peaks. In warmer weather, the terrace is charmant, with tables centred around centuries-old chestnut trees. You can choose one of three tasting menus, with four, seven or nine surprise courses – there's no a la carte. Lake and plant cuisine is a focus in the open kitchen, with fish caught hyper-locally (perch, omble chevalier and crayfish), and herbs and salads picked straight from the garden. Typical fare might include confit trout with local bottarga; barbecued beetroot with smoked fera (another fish indigenous to the area); and crabfish done multiple ways – as a bisque, tartare, in pie and served in its shell. Desserts of roast parsnip with chestnut honey and homegrown chicory tart are a lovely finale.
