Seasonality and locality might seem old hat in the circus of ever-changing hospitality trends, but at Le Restaurant of Avignon favourite La Mirande, the duo have never been merely a fling. Florent Pietravalle’s revered dining destination seeks to distil the flavours of its locale (in this case, the South of France) into an unforgettable dining experience. Located inside the hotel of the same name – an ancient, 14th century palais of elaborately painted ceilings and antique furnishings – the dining room serves thoughtful, yet playful set menus of two, three or four courses. Expect plates of sea bass doused in citrus-scented butter, oyster ice cream and hand-dived scallops plated with carrot and fermented honey. A wine list of predominantly organic and low-intervention producers is comprehensive, with five pages dedicated to Châteauneuf-du-Pape alone and a generous selection by the glass. Elsewhere on the property, a relaxed garden bistro and intimate chef’s table experience await.
