A former great hope for the French ski team, Loubet changed course to become France’s youngest Michelin-starred chef (at Le Moulin de Lourmarin), and his mission statement here sees him return to an even earlier point in his life, recreating the flavours of his childhood in the Savoie. Served amid antique furniture and pastel linens, dishes showcase the fresh herbs and flowers of the Luberon: think sunflower heart with summer truffle, and lamb casserole smoked with thyme.
