La Villa Madie
Cassis, France
It was the view of the calanques of Cassis and the Mediterranean that convinced Marielle and Dimitri Droisneau to buy up La Villa Madie, and whilst the vista is certainly a bonus for diners, it’s the food that keeps people coming back. The owners might humbly describe themselves as a 'contemporary innkeeper couple', but since opening their doors in 2011 the restaurant has become not only a Cassis institution, but also earned a much-coveted three Michelin stars. There are no signature dishes here. Instead the menu constantly evolves according to the seasons and often with playful interpretations of Chef Droisneau’s favourite South of France ingredients. This being a seaside restaurant, sardines make a regular appearance, as do carabineros shrimps, which are often served with red fruits in spring. And if you’re visiting in summer, ask for one of the most popular tables at the end of the terrace, which come with the best view of the Cassis creeks.
