The eponymous Guy Lassausaie has been in charge here since 1984, when he became the fourth generation of his family to have manned the kitchen of this former coaching inn. Melding traditional Lyonnaise cuisine with global influences picked up on his travels, the chef’s à la carte and tasting menus combine unexpected combinations of ingredients with classic technique: think langoustine tails wrapped in angel hair pasta, served with a Madagascan vanilla-flavoured beurre blanc sauce. Tables are well spaced out, service is impeccable and the robust wine selection runs the gamut from regional standards to prestige crus.
