Any restaurant that's named after the 200-year-old wine maker Château Cheval Blanc's most coveted vintage sounds full of gastronomic promise. And Le 1947 – the only restaurant at the French Alps ski resort of Courchevel to hold three Michelin stars – doesn't disappoint. Menus offer the culinary equivalent of the 600km of prime ski runs on its doorstep. The all-white Sybille de Margerie-designed dining room has a cosy Alpine feel, with blankets on chairs and tables arranged around the open kitchen, allowing guests to watch the talented Yannick Alléno-led brigade in action. Fusing refined French technique with creativity, the French chef spends summers discovering new ingredients, perfecting techniques and trialling fresh methods. Sauces created using extraction and fermentation are a highlight – dishes include the likes of pan-seared foie gras with green plums, shimeji and fresh walnuts, and wagyu served alongside salad leaves from the mountains made ultra-crispy with the use of liquid nitrogen. With floor-to-ceiling windows framing the snowy mountainscape, this is peak chic.
