Two very different paths, one unique vision. That’s how Arborescence, in Croix on the outskirts of Lille, came about. It’s owned and run by Félix Robert and his wife Nidta Robert Prathum. While Robert grew up in Steenvoorde training to be a classic chef in restaurants across France and in Tokyo, Nidta was born in Thailand, where she grew up on a rice and fruit farm before training to become a sommelier. The couple met at the Lycée Hôtelier in Le Touquet, discovering a shared dream of opening their own restaurant. Their vision comes to life in the three tasting menus: Pensée, Songe or Rêve – which read like poetry and offer conceptual, unpredictable dishes. Seafood takes centre stage with sea bass tartare and ikejimé mayo; smoked eel ravioli; sole in a birch sap sauce; flame-grilled red mullet on a wasabi tartare… though it’s not exclusively pescatarian. You might be served pigeon or a Thai twist on sweetbreads. The space itself, in a former textile factory, is sleek.
