Inspired as a child by his grandmother’s cooking, Michel Kayser trained in kitchens across France before taking over Restaurant Alexandre in the mid-80s. The serene property is set in an idyllic garden shaded by Lebanese cedars, its trio of dining rooms and library-lounge decorated in a muted, natural palette. Top-notch produce forms the backbone for Kayser’s five, eight or 11-course ‘Quintessence’ tasting menu, which includes such delicacies as sautéed Vaunage snails and roasted local pigeon – paired with superb Languedoc-Roussillon wines.
