A rural restaurant and hotel that roots its avant-garde food strongly in the surrounding Pas-de-Calais region and the Côte d'Opale, the coast of northern France facing the English Channel. Chef Alexandre Gauthier turned heads as soon as he took over his father’s restaurant in 2003. The interiors of the 16th-century cottage (which he soon renovated to complement his cooking) still shock first-timers: the dining room, part open to the garden, has more in common with a modernist art gallery than a fine-dining restaurant and the huge open kitchen is all stainless steel and bright lights.
