Passionate ‘fisherman chef’ Christopher Coutanceau took over the former Restaurant Richard Coutanceau from his father in 2007, putting his own stamp on the exquisite menus that have been championing the local terroir since 1984. Calming shades of grey characterise the dining room, with huge windows offering Atlantic views. Creative dishes work in harmony with the seasons, often offering multiple variations of the star ingredient: langoustines are served tartare with caviar and seared with spider crab and foam; octopus arrives as a carpaccio, stewed and fried. A cookbook is available for those who wish to recreate the joy back at home.
