Set within the Hôtel du Castellet, this Michelin three-star restaurant is located on the edge of a fragrant pine forest. The contemporary dining room is bolstered, in good weather, by a spacious terrace overlooking the grounds, the Med just visible in the distance. The eponymous chef, a native of Corsica, has led the kitchen since 2009, sending out meticulously crafted, Mediterranean-influenced menus – including a surprise seafood option – that showcase regional produce. Here, the traditional cheese trolley makes way for an entire cellar, where guests are invited to make their selection from more than 100 different varieties, with expert guidance.
