Flocons de Sel draws visitors to Megève as much as the Alpine resort's ski slopes. The simple-sophisticated dining room sets the tone, with its floor-to-ceiling wood with huge bay windows overlooking the pine-carpeted valley in the summer and mountains blanketed in snow when the winter arrives. It's pleasingly soothing, just the kind of space where you want to settle in, whatever the season, for a menu that reads as a celebration of its Haute-Savoie location. Chef Emmanuel Renaut finds his inspiration in the peaks: rosehips, wild blackberries, porcini mushrooms and chanterelles dance across the menus, with game from the woods and fish sourced from local lakes. Parsnip and beetroot gnocchi comes with horseradish garden consommé and old Beaufort; fillet of venison is served with blackberries, blackcurrant and fir; and veal head is paired with vinegar sabayon and truffles. The cellar has all the big-name wines, as well as pours from Savoyard vineyards and an unusual collection of chartreuses, a passion of chef Renaut.
