There's a quiet confidence to the menu, where vegetables and seafood are the hero, but its sauces – lively and multi-layered – are what truly steal the show. Flavour combinations toy with acid and heat, with tuna carpaccio dressed in fermented raspberry and ginger, while peas are brought to life with buttery garlic, lemon, fresh mint. Dishes are refined, but in a way that isn't overly mannered, landing at a veined marble bar beneath the soft glow of glass, hanging orbs.
