Pascal Barbot opened his bijou 16th arrondissement restaurant almost 20 years ago but it still feels at the forefront of contemporary French dining. Barbot trained under the iconic Alain Passard at L’Arpège and co-owns L’Astrance with his colleague from that time, restaurant manager Christophe Rohat. His time in Sydney and the South Pacific shines through his cooking. Menus change daily but a long-standing favourite is a tart of button mushroom and verjus-marinated foie gras, hazelnut oil and roasted lemon paste.
