A family run hotel in a suburb of Reims, in Champagne. Chef Arnaud Lallement champions the producers behind each dish, naming them on the menu, from the blue Brittany lobster he cooks in homage to his father, who opened L’Assiette Champenoise in 1975, to the suckling lamb with purple artichoke. You can order a flight of champagne with the ‘emotion’ tasting menu, which matches Grandes Cuvées and grower Champagnes to Lallement’s creations.
