Part of The Maybourne Riviera hotel, this minimalist dining room lets the view do all the talking, offering a menu inspired by that vista of the Mediterranean sea. Guests can take their pick from a tasting menu or order á la carte, with dishes including blue lobster, courgette, burrata and pollen and a dessert of nori seaweed marine millefeuille, bourbon vanilla and toffee sauce.
