Dining at Le Coquillage is like diving into the ocean that this stunning 1920s villa on the Brittany coast overlooks. Indeed, you can almost taste the sea, if not through the windows, then certainly on your plate. Chef Hugo Roellinger is a champion of classic Breton seafood, elevating freshly landed fish and shellfish with seaweed, sea vegetables, herbs and spices. The set menus lean into the whimsical: the main one is called By the Whims of the Wind and the Moon of H. Roellinger; the other goes by the title of Under Cover of the Waves. Neither do the titles of the dishes give much away: Maritime Bread, Fairy Refuge, Under the Trees and Floating Island/Land in Sight. But trust in the process, you won't be disappointed. Recent triumphs include lobster with cocoa and a trio of Mexican peppers; and langoustine with currants. There's also a fine selection of cheeses from Brittany and Normandy, served with bread made from ancient grains and baked in a wood oven.
