Chef Hugo Roellinger is a champion for classic Breton seafood (with a contemporary twist), as well as the local fishermen that haul the fruits from the waters every day. Expect classic dishes with seaweed, sea vegetables, herbs and spices from across the world. Recent triumphs include lobster with cocoa and a trio of Mexican peppers, and langoustine with currants. There's also a fine selection of cheeses from Brittany and Normandy, served with bread made from ancient grains and baked in a wood oven. Sublime.
