Yannick Alléno is best known for his fabled Paris address, Pavyllon Leyoden, which houses three restaurants that together clock up six Michelin stars, plus his swanky London and Monaco Pavyllon outposts. The hugely respected French chef-restaurateur is perhaps lesser known for equally prestigious, two-star La Table de Pavie, which sits in the tiny Bordeaux village of Saint-Émilion. His arrival in Bordeaux gave the chef a new terroir to explore and the chance to pay homage to Bordeaux’s most famous speciality: its wine. Elements of the vineyards have been threaded through the menu, from vine shoots and leaves to grape musts, all bound together by Alléno's signature sauces.The impressive wine list is 700 references strong and includes 80 châteaux from Saint-Emilion alone. And whilst traditional wine pairing often lets the food speak first, here sometimes it’s the wine that drives the dish: a poached langoustine dish was specifically created to pair the seafood with a red wine from Château Pavie, and the mignardise esprit de Pavie, a red wine granita, was designed to keep a flavour of wine right until the end of the meal.
