This is the flagship restaurant of the late, great French chef Bernard Loiseau. The two-Michelin-starred establishment is located inside Le Relais Bernard Loiseau, a pretty-as-a-picture five-star hotel in the sleepy commune of Saulieu. Floor-to-ceiling windows in the elegant dining room offer views of the glorious gardens. Today the restaurant is led by the talented Louis-Philippe Vigilant, who left his native Martinique at the age of 17 to learn to cook professionally in mainland France; his wife Lucile is the kitchen's highly skilled pastry chef. Menus feature a deft, modernised version of the rich Burgundian food for which Loiseau was famed: ceps, hazelnuts and pine nuts, sautéed duck foie gras with cauliflower, and roast marinated Charolais beef with a pine-infused jus de viande. The chef's table in the heart of the kitchen was created especially for chef Bernard by his wife Dominique.
