The flagship restaurant of the late, great French chef Bernard Loiseau. Formerly known as La Côte d'Or, Le Relais Bernard Loiseau is today led by the talented, Breton-born Patrick Bertron, who started here as a commis in 1982. Located in the sleepy commune of Saulieu, the peach-coloured five-star hotel is situated in glorious gardens, with floor-to-ceiling windows in the elegant dining room offering verdant views. Menus feature a deft, modernised version of the rich Burgundian food for which Loiseau was famed: ceps, hazelnuts and pine nuts, sautéed duck foie gras with cauliflower, and roast marinated Charolais beef with a pine-infused jus de viande.
