Unable to transport his guests to the forest, chef Clément Bouvier has brought the forest to them with his Ursus dining room in the Hôtel Les Suites, in the Val Claret area of Tignes, which features real fir trees, a leafy canopy ceiling, gently undulating carpets and tables made of walnut wood. Named after the last breed of brown bear to have been seen in the Savoie, whose likeness graces the crockery, the 12-table restaurant celebrates the region's bountiful natural larder in expertly executed, whimsically presented (think stones, logs and moss) dishes. The seasonally driven surprise tasting menus are inspired by long hikes through the mountains, using produce found in the Haute-Tarentaise valley, with around 80 per cent of the ingredients sourced from the Savoie region. Dishes highlight local freshwater fish, alpine game, mountain herbs and artisanal dairy. Talking of which, the 100 per cent Savoyarde cheese trolley and superb local wines are worth lingering over.
