Unable to transport his guests to the forest, chef Clément Bouvier has brought the forest to them with his Ursus dining room, which features 390 real fir trees, a leafy canopy ceiling, gently undulating carpets, tables made of walnut wood and soft lighting. Named after the last breed of brown bear to have been seen in the Savoie – whose likeness graces the crockery – the 45-cover restaurant celebrates the region’s bountiful natural larder in expertly executed, whimsically presented (think stones, logs and moss) dishes. The 100% Savoyarde cheese trolley and superb local wines are worth lingering over.
