It opened in 1976 and has since led an army of Germany's top chefs. At the helm for the past decade is Torsten Michel, whose delicate French cuisine is as spellbinding as the locale. Draw your gaze away from the floor-to-apex gable window, which frames a valley carpeted in firs in summer, snow in winter, and focus on the food. Painstaking attention is given to the likes of Gillardeau oysters with caviar and champagne sauce; local venison medallions with pepper and glazed pineapple; and Alsatian pigeon lacquered with liquorice and cedar honey. The cheese trolley presented and served at the table is an invitation to explore the earthy, aromatic flavours produced from the rich milk of the cows that graze in these high-altitude pastures.
