At the pass is chef Joachim Wissler – part of the vanguard of the new school of German cooking – whose avant-garde approach sees the country’s traditional cuisine reimagined by way of global ingredients and technique. Tasting menus – five to ten courses bursting with intricate flavour – set the benchmark. Think scallop with pickled cucumber and wasabi-avocado puree, foie gras and lime mousse with woodruff and white strawberries, and guinea fowl curry with macadamia nuts.
