Sweeping up to Vendôme makes you feel like you're arriving at a palace. Indeed you are. The starry restaurant on the outskirts of Cologne is housed in the grand Schloss Bensberg hotel, which was built between 1703 and 1710 for the Prince-Elector Johann Wilhelm and his wife Maria-Luisa of the Medici family. You'll certainly eat like royalty. At the pass is chef Dennis Kuckuck whose contemporary approach sees the country's traditional cuisine reimagined by way of global ingredients and his unique technique. Tasting menus – five or seven courses bursting with intricate flavour, whether you opt for Menu I (from the land and the sea) or Menu II (exclusively plant-based) – set the benchmark. Think confit of perch with a bay leaf beurre blanc; lamb from the nearby estate served alongside artichoke salad and paprika gremolata; and innovative desserts by chef-pâtissier Larissa Metz including Spaghetti Ice Cream – Parmesan aged for 70 months with a strawberry infusion, wild strawberry tartlet and oregano foam.
