This smart hotel dining room deserves a place on the itinerary of anyone who has a penchant for French fine dining and is visiting the Rhineland. Founding chef Helmut Thieltges had been at the helm since 1978, but when he sadly died in 2017 Clemens Rambichler stepped up to the pass. Although he has modernised, elegance and tradition are still the order of the day in tasting menu that include signature dishes such as beef tartare topped with caviar and foie gras doused in Muscat vinegar. This is not an occasion to pass on the bread. Rather than a basket, an entire trolley loaded with sourdough, pretzel and brioche is served tableside. Opt for the a la carte option with a single bottle of wine and the price is about half what it would be for a three-star Michelin restaurant in Paris. Afterwards, a stroll around the hotel’s parkland is a genteel way to digest.
