This fully vegan fine dining restaurant is housed in a characterful building that holds the dubious honour of being the narrowest in the city. Each of its seven floors boasts views of River Main through large floor-to-ceiling windows. The interior design is pleasingly sleek: monochrome, minimalist and modern. Chef Ricky Saward’s cuisine embraces techniques such as pickling and fermenting and uses only seasonal vegetables grown at the restaurant’s own permaculture farm. Mostly served and explained by the chefs themselves, a farm-to-table set menu is paired with natural wines from a small but thoughtfully curated wine list. You’ll need to book six months in advance and dig deep in your pocket at the end of the evening, but when the food looks and tastes this good you won’t regret it.
