But don't let the sweeping views or the historic setting distract you from the artistry on your plate. The talented culinary team crafts exquisite modern German gourmet dishes using the best ingredients from the surrounding area. Herbs are freshly picked from the hotel's own garden (the wild herb salad with lemon-apple vinaigrette, walnuts and pickled beetroot is fresh as it comes); other ingredients are from carefully curated Rheingau producers. The wine list has a fine line in rieslings, of course. Elegant and precise creations include charred kingfish with ceviche, celery sorbet and coriander sponge cake; wiener schnitzel with potato cucumber salad and cranberries; and loup de mer (seabass) on a celery tarte tatin.
