Located in the Das Achental Resort in the heart of Chiemgau, the restaurant embraces the Bavarian concept of gemütlichkeit (a feeling of warmth, comfort and good cheer). Staff are hospitable and the backdrop is cosy-traditional, with a central wood-burner and warm lighting. Three Michelin-starred it may be, but the essence of Es:senz is simple: to zero in on the essentials in every dish. You won’t find multiple flavours fighting for attention on the plate; instead, chef Edip Sigl takes one ingredient and puts it on a pedestal. The aperos and amuse bouches set the tone: the bread and brioche with Alpine salted butter are conspicuous in their deliciousness. There are two set menus. The six-course version focuses on regional produce and dishes (char caught that day, red fruit jelly with locally grown berries); the eight-course draws from global influences (quail with Périgord truffle, saffron ice cream with fermented rosehip). Both reflect a culinary team who approach their craft with the utmost care – you can compliment the chef when he brings around the petit fours, as he’s wont to do.
