The 25-minute taxi ride from Corfu town to the bougainvillea-clad terrace of Etrusco won't be one gastronomes will regret. The restaurant, owned and run since 1992 by the Italian-Corfiot Botrini family, is considered to be one of the finest fine-dining establishments in Greece. The setting is delightful, the terracotta-coloured building sits in the shade of a giant mulberry tree, with olive groves stretching in every direction. Ettore (who took over from his father, the eponymous Etrusco, as chef-patron) combines inventive combinations and high technique across the a la carte and tasting menus, offering premium island produce – vegetables, flowers and fruits come from the restaurant garden – shot through with molecular wizardry. The chef's two stints of training with his friend, renowned Basque chef, Martín Berasategui, are much in evidence and realised by head chef, Nikos Billis. The names of the dishes say it all: Uncle Nick Told Me..., Moroccan Travel Notes and Pasta Cooked Like a Risotto. And yet, despite the innovation, the simple, natural flavours shine. Desserts, which include goat's milk ice cream and a sweet tzatziki, are a joy.
