“Who made the rules?” asks Purovoku Project, via a neon sign in this Thessaloniki bar. It’s a question, or rather philosophy, that inspires every aspect here, from sustainability practices to the cocktails themselves, not to mention design. Hidden down an alley beside the city’s historic Bezesteni Market, the bar’s interior is relatively unadorned, with a chaotic arrangement of fluorescent tubes lighting the bar itself. But it’s sustainability that is at the core of everything at Purovoku Project, influencing the bar’s zero-waste approach as well as its choice of ingredients and suppliers. Fresh ingredients for cocktails are grown on the bar’s rooftop greenhouse, while others are sourced through partnerships with independent producers in northern and central Greece. These are used to create an ever-changing selection of cocktails, making every visit different – expect unusual combinations like bananas and black garlic or peaches with mezcal, jalapeños and kimchi.
