Arriving in Guatemala at the tender age of 25, Colombian chef Nicolas Solanilla quickly developed a personal culinary style shaped by newly discovered local ingredients and his memories of home. From a series of pop-ups, his restaurant Ana has transformed into a deeply personal project named after his grandmother, whose signature is the restaurant's logo. Flashes of Colombian inspiration appear throughout the menu, which, almost, reads like a biography. Proudly local and full of warmth, it's also a tribute to Guatemalan produce: don't miss the heirloom tomatoes, which uses organic tomatoes from Antigua and sal negra from Quiché – a seasoning renowned for its sulfurous aroma.
